Your commercial kitchen layout is one of the most consequential decisions you make when fitting out a new venue. Get it right and your team moves efficiently, your health inspector signs off on day one, and your equipment lasts. Get it wrong and you spend every service working against the design.
This guide covers the five main commercial kitchen layouts used in Australian venues, what each suits, and the stainless steel fabrication considerations that come with each one.
Why Layout Matters More Than Equipment
Most operators focus on equipment — the oven, the fryers, the refrigeration. Layout is an afterthought. That is the wrong order.
Your commercial kitchen layout determines how far your staff walk between prep, cook, and service. It determines where your exhaust canopy needs to be positioned to comply with AS 1668.2. It determines how many sinks you need and where they go under the Food Standards Australia New Zealand Code. It determines whether a health inspector can see a clear separation between raw and ready-to-eat zones. And it determines whether your benchtops, dishwasher, and coolroom can all be accessed without staff crossing paths.
A well-designed commercial kitchen layout reduces labour cost, reduces cross-contamination risk, and reduces the chance of failing a Queensland Health inspection.
The 5 Main Commercial Kitchen Layouts
1. Assembly Line Layout
The assembly line layout moves food through a straight or parallel sequence — prep, cook, plate, service — in a single direction. Staff stay in their zone. Food moves forward, never back.
Best for: High-volume venues producing one or a small number of menu items. Burger restaurants, sandwich shops, pizza operations, school canteens.
Stainless steel fabrication considerations: Long continuous benchtop runs with integrated sinks at the prep end. Exhaust canopies over the cooking line, sized to the full equipment footprint. Under-bench refrigeration built into the run rather than freestanding.
What it costs you if done wrong: Bottlenecks at any single station back up the entire line. If your benchtop run is too short, your prep and plating zones overlap and your inspection fails.
2. Island Layout
The island layout places cooking equipment in a central island, with prep and service zones around the perimeter. The island typically holds the cooking line — grills, fryers, combi ovens — with an overhead island canopy extracting above it.
Best for: High-volume restaurants with multiple chefs working simultaneously. Hotel kitchens, large club kitchens, catering operations.
Stainless steel fabrication considerations: Island canopies are more complex to fabricate than wall-mounted canopies. They need to be sized to the combined output of every piece of cooking equipment below them and must meet AS 1668.2 without a wall to anchor to. Custom stainless steel is almost always required — off-the-shelf canopies rarely fit island configurations.
What it costs you if done wrong: An undersized island canopy is the single most common reason commercial kitchens fail ventilation inspections. Size it to the equipment, not to the room.
3. Zone Layout
The zone layout divides the kitchen into dedicated functional zones — cold prep, hot prep, cooking, plating, dishwash, storage — each physically separated. Staff work within their zone with defined pass-through points.
Best for: Full-service restaurants, aged care facilities, hotels with multiple dining outlets, venues where different menu categories require different temperature zones.
Stainless steel fabrication considerations: Each zone typically requires its own benchtop configuration, sink, and refrigeration setup. The separation between raw and ready-to-eat zones must be physically clear — not just a procedural instruction — which usually means distinct stainless steel benchtop runs rather than one continuous surface.
What it costs you if done wrong: Zone layouts have the highest fabrication complexity and cost. Skimping on the physical separation between zones creates food safety compliance gaps that surface in inspections.
4. Galley Layout
The galley layout runs two parallel benchtop and equipment runs facing each other, with a corridor between them. Staff work both sides. It is the most space-efficient layout for a narrow kitchen footprint.
Best for: Food trucks, narrow restaurant kitchens, small cafes, venues where the kitchen footprint is constrained and cannot be widened.
Stainless steel fabrication considerations: In a galley kitchen, every millimetre matters. Benchtop overhangs, under-bench fridge depths, and walkway clearance between the two runs all need to be calculated before fabrication begins. The corridor must be wide enough to meet the Queensland Building Code and allow two staff to pass without contact.
What it costs you if done wrong: A corridor that is too narrow fails building compliance and creates OH&S hazards. A food truck galley that has not been measured precisely will have components that simply do not fit.
5. Open Kitchen Layout
The open kitchen layout is visible to diners. The cooking line, or part of it, is designed to be seen. This creates specific challenges: equipment must be presentable, exhaust must be effective without dominating the dining room, and food safety compliance must be achieved in a space where the inspector is looking at aesthetics too.
Best for: Upscale restaurants, teppanyaki venues, show kitchens, venues where the kitchen is part of the brand experience.
Stainless steel fabrication considerations: Stainless steel is the standard material for open kitchens precisely because it looks professional and cleans well under scrutiny. Custom benchtop profiles, polished finishes, and integrated bar sections are common. Canopy sizing still must meet AS 1668.2 regardless of appearance.
What it costs you if done wrong: An open kitchen that fails a health inspection is failing in front of your customers.
What to Decide Before You Call a Fabricator
Before a stainless steel fabricator can give you an accurate quote, you need to know your menu type and volume — this determines zone requirements and equipment footprint. You need your ceiling height, which determines canopy drop and ventilation system design. You need your available footprint, which determines which layout is physically possible. You need to know whether you have council approval for a commercial kitchen in the space. And you need your opening date — fabrication and installation takes time.
