There are dozens of stainless steel grades, each engineered for different conditions. Choosing the wrong one means faster corrosion, hygiene risks, and expensive replacements. Choosing the right one means a surface that outlasts your equipment and still looks sharp after a decade of daily service.

What Actually Makes Stainless Steel “Stainless”?

Grade 304 is not the right choice for coastal or marine environments. Salt-laden air and chloride exposure will eventually pit the surface and break down the passive oxide layer. That’s where 316 comes in.


Grade 316: The Marine-Grade Option

Grade 316 is the upgrade from 304 for demanding environments. The critical difference is the addition of molybdenum, typically 2 to 3%.

What’s in it?

  • 16 to 18% chromium
  • 10 to 14% nickel
  • 2 to 3% molybdenum

That molybdenum is what earns it the “marine grade” label. It significantly improves resistance to chloride-induced pitting, which is the main failure mode in coastal and marine environments.

If your kitchen is in suburban Brisbane, Sydney, or Melbourne, you almost certainly do not need 316. The improvement in corrosion resistance over 304 in a normal kitchen environment is negligible. You’ll pay a premium of roughly 20 to 30% more for the material without any practical benefit.

Where 316 is worth it: if you’re building a kitchen at a beach resort, a waterfront venue, or a food processing facility using aggressive cleaning chemicals regularly.


Grade 430: The Budget Ferritic Option

Grade 430 is a ferritic stainless steel, meaning it contains no nickel. It’s magnetic and significantly less corrosion-resistant than 304 or 316.

How to Identify Which Grade You Have

If you’re inheriting an existing kitchen or buying second-hand equipment, knowing what grade you’re working with matters.

  • Magnet test: 430 is magnetic. 304 and 316 are typically not. This is a quick way to identify ferritic (430) vs austenitic (304/316) stainless.
  • Acid test kits: Chemical test kits can distinguish between 304 and 316 by detecting the presence of molybdenum.
