Stainless Steel Benchtop Thickness: What Gauge Do You Actually Need?

When operators spec a stainless steel benchtop for their commercial kitchen, they focus on the grade of steel — 304 or 316 — and the finish. Thickness gets far less attention. That is a mistake. The stainless steel benchtop thickness you choose affects how it performs under service load, how much noise it makes, and whether it holds up long enough to justify the investment.

This guide explains the standard gauges used in commercial kitchen benchtops, what each is suited for, and how to decide what your kitchen actually needs.

How Stainless Steel Thickness Is Measured

Stainless steel sheet thickness is measured in millimetres. In Australian commercial kitchens, the common thicknesses for benchtops are 1.2mm, 1.5mm, and 1.6mm. Some fabricators also work with 2.0mm for heavy-duty applications.

Thicker steel is stiffer, heavier, more resistant to denting, and quieter in use. Thinner steel is lighter, cheaper to fabricate, and adequate for lighter-duty applications. The difference in material cost between 1.2mm and 1.6mm is relatively small. The difference in performance over five years of service is significant.

The Standard Gauges Explained

1.2mm — Light Commercial

1.2mm stainless steel is the minimum thickness used in commercial kitchen fabrication in Australia. It is appropriate for low-traffic prep benches, serving counters with no heavy equipment placed on them, and benchtops where weight is a critical constraint — such as food trucks and mobile kitchens.

At 1.2mm, you will notice more drum resonance when items are placed on the bench. It produces a louder, more hollow sound than thicker gauges. Over time, 1.2mm steel is more susceptible to surface denting under repeated impact from heavy pots, cutting boards, and equipment.

For a high-volume commercial kitchen running continuous service, 1.2mm stainless steel benchtop thickness is generally undersized.

1.5mm — Standard Commercial

1.5mm is the most common stainless steel benchtop thickness specified for commercial kitchens in Australian restaurants, cafes, clubs, and hotels. It offers a meaningful improvement in rigidity and dent resistance over 1.2mm while remaining practical to fabricate and transport.

At 1.5mm, drum resonance is significantly reduced. The bench feels and sounds more solid. It holds up well to the impact of heavy equipment, commercial food processors, and the general punishment of a working kitchen.

Most reputable fabricators will spec 1.5mm as their standard for commercial kitchen benchtops unless you have a specific reason to go lighter or heavier. At A1 Custom Stainless & Kitchens, 1.5mm is our default specification for all commercial work.

1.6mm — Heavy Commercial

1.6mm is specified where the benchtop will take above-average punishment. Common applications include benchtops that support heavy commercial equipment such as stand mixers, meat slicers, and industrial food processors. It is also the right choice for high-volume hotel kitchens where constant heavy use is the norm, butcher shop preparation benches where repeated chopping and impact is expected, and anywhere the operator wants maximum service life with minimum maintenance.

The difference in rigidity and noise between 1.5mm and 1.6mm stainless steel benchtop thickness is noticeable but less dramatic than the step from 1.2mm to 1.5mm. For most commercial kitchens, 1.5mm is sufficient. For butchers, high-volume hotel kitchens, and anywhere heavy equipment sits permanently on the bench, 1.6mm is worth the small additional cost.

2.0mm — Industrial

2.0mm and above moves into industrial fabrication territory. You would rarely need this for a standard commercial kitchen benchtop. Applications include processing facilities, commercial bakeries with heavy mechanical equipment, and specialist industrial food production environments.

The Substrate Matters Too

Stainless steel benchtop thickness does not tell the whole story. Most commercial benchtops are fabricated over a timber substrate — typically particleboard or plywood — which dramatically affects stiffness, noise, and feel regardless of the steel thickness.

A 1.5mm stainless benchtop over a solid timber substrate performs noticeably better than a 1.6mm benchtop without one. The substrate absorbs impact, reduces drum resonance, and gives the bench its rigidity. When comparing quotes, check whether the substrate is included — some fabricators spec bare steel with no substrate and the price difference can be misleading.

Does Stainless Steel Benchtop Thickness Affect Compliance?

Queensland Health and the Food Standards Australia New Zealand Code do not specify a minimum benchtop thickness. What they require is that surfaces are smooth, impervious, easy to clean, and in good repair. A 1.2mm bench that has dented and developed crevices where bacteria can accumulate will fail an inspection. A well-maintained 1.5mm bench will not.

Thickness is therefore a practical durability question, not a compliance specification. But the two are related — thinner steel dents faster, and dents create hygiene risks that do show up in health inspections.

What Should You Specify?

For most commercial kitchens in Brisbane and Queensland, use these as a starting guide:

  • Food trucks and mobile kitchens: 1.2mm where weight matters, 1.5mm where it does not
  • Cafes, restaurants, and clubs: 1.5mm standard
  • High-volume hotel kitchens and aged care: 1.5mm minimum, 1.6mm preferred
  • Butcher shops and fishmongers: 1.6mm
  • Industrial and processing: 2.0mm+
