The most common reason a stainless steel sink bench fails a Queensland commercial food premises inspection is not the bench itself. It is how the sink is attached to it. A drop-in bowl inserted into a cut hole in the bench surface creates a join between the bowl rim and the bench top that sits directly in the food preparation and cleaning zone. Grease, food particles, and water work into that join. The seal degrades. The surface becomes impossible to clean to the standard AS 4674-2004 requires, and the inspector documents it as a failure.

A correctly fabricated stainless steel sink bench eliminates that join entirely. The bowl, drain board, bench run, tap holes, and waste connection points are incorporated into one piece of fabricated steel from the start. There is no seam at the bench surface, nothing to degrade, nothing that needs resealing, and no construction detail that an inspector can flag.

Why Drop-In Fails and Integrated Passes

Before getting into specification decisions, it is worth understanding why the construction method matters more than any other decision on a commercial sink bench.

Drop-in: the bowl rim sits at bench surface level in a cut hole. A visible join exists directly in the food preparation zone. That join cannot be made permanently hygienic regardless of what sealant is used. The seal degrades under commercial cleaning chemical frequency. Grease and food particles work into the gap. This configuration will fail an AS 4674-2004 commercial food premises inspection.

Undermount: the bowl sits below the bench surface with its rim attached to the underside of the bench cutout. The join is at the underside of the bench rather than the top, which reduces visible hygiene risk but does not eliminate the join. Less commonly specified in commercial stainless bench fabrication.

Integrated (welded): the bowl is fabricated as part of the bench in a single welded piece. No join exists at the bench surface. The bowl and the bench are the same piece of steel. This is the construction method AS 4674-2004 requires for commercial food premises and the only configuration we recommend for any commercial kitchen application.

The Eight Specification Decisions to Confirm Before Ordering

Getting these wrong at the specification stage creates problems that cost more to correct than they would have cost to get right before fabrication. None of these can be changed after the bench is built without additional cost.

  1. 1

    Bowl count

    Single, double, or triple bowl. Bowl count is determined by your operation type and in some commercial environments by local council food safety requirements. Small cafes and quick-service restaurants commonly specify double bowl. High-volume commercial kitchens, school canteens, and operations subject to specific sanitisation requirements often require triple bowl for separate wash, rinse, and sanitise stations.

    Bowl dimensions and depth

    Standard commercial bowl depth is 300mm. Deeper bowls at 400mm are available for operations washing large pots, sheet trays, or full-size gastronorm containers. Bowl width and length are fabricated to your specification. Bowl depth cannot be changed after fabrication — specify 400mm at the ordering stage if you need it.

    Drain board configuration

    Left-hand, right-hand, or double drain board. Drain board position is determined by the direction of workflow in your kitchen. Food safety practice requires clean-to-dirty flow. The drain board should support that flow direction, not work against it.

    Tap hole positions

    Tap holes are punched into the fabrication before the bench is completed. The number, size, and position of holes must match your confirmed tapware selection. Adding or repositioning tap holes after fabrication is possible but adds cost and leaves a visible mark on the bench surface. Confirm your tapware before the drawing is finalised.

    Backsplash height

    If the sink bench runs against a tiled wall, the backsplash return height must be confirmed against your tile line. A return that falls short of the tile line creates a gap between the bench and the wall. In a commercial kitchen, that gap is a hygiene failure point an inspector will document.     Drainage slope

    The drain board and bowl base are fabricated with a built-in slope toward the waste outlet. The standard slope on a commercial drain board is 1:60 — approximately 10mm of fall per 600mm of drain board length — toward the waste connection point. The direction of slope must be confirmed against your waste rough-in position. If the slope runs away from the waste outlet, water pools on the drain board surface permanently.

    Under-bench clearance

    If the bench will sit over an under-bench bar fridge, pass-through dishwasher, or storage unit, the internal clearance height must be confirmed before fabrication. Standard leg height puts the underside of the bench top at approximately 820mm to 840mm depending on leg foot configuration. Confirm your equipment dimensions against this before the drawing is finalised.

    Grade selection

    Grade is more critical at the sink bench than anywhere else on the bench run because this is where water, cleaning chemicals, and food waste are permanently concentrated. 304 grade is the correct specification for commercial kitchen sink benches in Brisbane and inland Queensland locations. 316 grade is the correct specification for coastal venues on the Gold Coast and Sunshine Coast, seafood processing operations, any kitchen where high-chloride sanitisers are used regularly at the sink, and outdoor sink benches. The molybdenum content in 316 prevents the chloride pitting that develops at the bowl and drain board in these environments with 304 over time. What is the difference between an integrated and a drop-in sink bench?

Can I specify the number and position of tap holes?

Yes. Tap holes are punched before the bench is completed. The count, position, and size are confirmed against your tapware at the specification stage.

What bowl depth do I need for a commercial kitchen?
