Off-the-shelf stainless steel kitchen benches are built to standard widths and depths because that is what is economical to manufacture at volume. For a home utility room or a low-traffic garage workshop, a standard size is often acceptable. For a Queensland commercial kitchen subject to AS 4674-2004 food safety inspections, a standard size creates problems that are expensive to correct after installation: bench ends that fall short of the wall and leave a gap that traps food waste, heights that were never specified to your working environment, and surface configurations that ignore where your plumbing rough-ins actually are.

Three Decisions Made Before Fabrication That Determine Everything After

Most problems with commercial stainless steel kitchen benches trace back to at least one of these three decisions being made incorrectly or not made at all. None of them can be changed after the bench is built.

Steel grade. AS 4674-2004 sets 304 grade as the minimum specification for commercial food preparation surfaces in Queensland. 304 is non-porous, non-reactive with food acids, and built to handle commercial cleaning chemical frequency. For kitchens in coastal locations on the Sunshine Coast and Gold Coast, seafood processing operations, and any kitchen using high-chloride sanitisers, 316 marine-grade is the correct specification. 316 contains molybdenum, which gives it substantially higher resistance to chloride corrosion. Steel gauge. Standard commercial kitchen benching is fabricated in 16-gauge (1.5mm). If the bench will carry fixed heavy equipment — a combi oven, planetary mixer, or commercial slicer sitting permanently on the surface — 14-gauge (1.9mm) is the right specification. 18-gauge is appropriate only for low-load shelving. Gauge is confirmed at the design stage on every job, not after the bench arrives on site and flex is noticed under load. Backsplash returns. A backsplash return is a formed upstand at the rear or sides of the benchtop, created by pressing the steel sheet into a radius curve during fabrication before welding. It is not a kink or a sharp fold, and it cannot be welded onto a completed bench after installation. If your bench runs against a tiled or clad wall and you need a return, this must be decided before fabrication begins. The height of the return is confirmed against your tile line at the site measure. We confirm this on every job, without exception.

Commercial vs Residential: The Distinction That Drives the Specification

Subject to AS 4674-2004

A commercial stainless steel kitchen bench — for a restaurant, cafe, pub, club, school canteen, aged care facility, or any Queensland food business premises — must satisfy AS 4674-2004. That means no seams between the bench surface and any integrated sink bowl, no caulked joints at wall returns, and no construction detail that creates a surface an inspector cannot confirm is fully cleanable. Residential

No compliance inspections

A residential stainless steel kitchen bench — for a home renovation, butler’s pantry, home bar, or laundry — needs to be durable, hygienic, and built to your confirmed dimensions. The correct specification for the majority of residential applications is 304 grade, 16-gauge, brushed finish, with a correctly formed sink cutout if required. These benches are not subject to food safety compliance inspections, but they benefit from the same fabrication precision as a commercial bench.

From Site Measure to Installed Bench

We visit your space before quoting. We take dimensions, photograph the kitchen, and note the position of plumbing rough-ins, services, and structural elements that affect bench layout. Plan drawings are frequently inaccurate by the time construction begins and we do not rely on them for a fixed-price quote.

From the site measure we produce a fabrication drawing for your approval. Nothing is cut until you have signed off on the drawing. Lead time from drawing approval to completed installation is typically two to three weeks for a standard single-run bench scope. Larger commissions covering benching, canopy, and shelving simultaneously may require additional lead time confirmed at the quote stage. Installation is carried out by our own team. We do not subcontract. All installations carry a 12-month workmanship warranty.
