Stainless Steel Shelf and Shelving Options for Commercial Kitchens: Wall-Mounted or Freestanding Racking?

Load, Clearance and Grade: What to Specify Before You Order

Quick Summary

A stainless steel shelf in a Queensland commercial kitchen is a compliance item before it is a storage solution. Queensland EHOs check clearance heights, surface cleanability, and whether stored goods are kept off the floor in a way that allows cleaning underneath. A1 Custom Stainless & Kitchens fabricates and installs wall-mounted and freestanding stainless steel shelving for commercial kitchens across Brisbane and South East Queensland from our Burpengary East workshop. What Is Stainless Steel Shelving in a Commercial Kitchen?

Stainless steel shelving in a commercial kitchen refers to horizontal storage surfaces mounted to walls or supported by freestanding frames, fabricated in stainless steel to meet the cleanability and hygiene requirements of the Food Standards Code. It is not the same product as domestic shelving or general warehouse racking.

In a food premises context, every storage surface in a food handling or preparation area must be non-porous, tolerant of commercial sanitisers, and designed so the space beneath it can be swept and cleaned. Timber shelving fails on porosity. Powder-coated steel fails where the coating chips. Wire chrome shelving degrades in high-moisture environments. Stainless steel in the correct grade does none of these things.

Typical applications in a Brisbane commercial kitchen include:

  • Above-bench storage for ingredients, smallgoods, and dry goods at cook and prep stations
  • Wash-up zone shelving for cleaned equipment and crockery
  • Coolroom and dry store racking for high-volume ingredient storage
  • Wall-mounted shelving above sink benches for cleaning equipment and sanitisers

When Is Stainless Steel Shelving Required in Queensland Commercial Kitchens?

No Queensland regulation mandates stainless steel shelving specifically. Food Standards Code Standard 3.2.3 sets the performance requirement: surfaces in food handling areas must be unable to absorb food particles, grease, or water, and must be able to be effectively cleaned. Storage surfaces are included in that requirement.

In practice, Queensland EHOs check three things when inspecting shelving in a commercial kitchen. First, that stored goods are not on the floor — a minimum clearance of 150mm under the lowest shelf level of any freestanding unit is the accepted benchmark, allowing the floor beneath to be swept and cleaned. Second, that the shelf material itself can be effectively cleaned and does not harbour food waste or pests. Third, that shelving in wet zones is appropriate for water and chemical exposure.

Stainless steel satisfies all three criteria without qualification. Domestic shelving, timber, or powder-coated steel in a food preparation area is a common inspection failure and a straightforward reason for an EHO to withhold sign-off on a food business licence.

Choosing the Right Grade: 304 vs 316

For most Brisbane commercial kitchens in non-coastal locations, 304 grade is the correct specification for shelving. It handles standard kitchen conditions, commercial detergents, and daily sanitiser wipe-downs without degradation over its service life.

316 is the right specification where the shelving is in a coastal venue exposed to salt-air environments such as bayside suburbs around Redcliffe or Sandgate, or beachfront Gold Coast locations, where it is in a wash-up or wet area with constant water exposure and chloride-based sanitiser contact throughout every shift, or where it is in a seafood processing or high-salinity environment where brine or salt residue contacts the surface regularly.

Specifying 316 where 304 is sufficient adds unnecessary cost. Specifying 304 where 316 is required creates a corrosion and replacement problem within a few years of installation. The decision should be made deliberately at the specification stage. For the full grade breakdown, see our stainless steel grades guide.

Wall-Mounted vs Freestanding: Which Is Right for Your Kitchen?

Wall-mounted stainless steel shelving is fabricated to your specified length and depth and fixed to the wall structure at the heights you nominate. It does not occupy floor space, makes the floor beneath it fully accessible for cleaning, and is the most common choice for above-bench and above-sink storage in a Brisbane commercial kitchen. Before specifying wall-mounted shelving, confirm the wall substrate type — brick and masonry walls take different fixings than metal stud partitions — and the load capacity of the wall. A shelf loaded with ingredient containers, crockery, and equipment is heavier than it appears. Above-bench shelving typically sits at 450mm to 600mm above the bench surface, leaving the bench accessible below and the shelf reachable without a step.

Freestanding stainless steel racking is a self-supporting frame system that does not require wall fixings, is adjustable, and scales up easily for high-volume storage. It is the right choice when the wall cannot carry the load a full shelf run would impose, when the kitchen needs multiple shelf levels and significant linear metres of storage, when the storage area is a coolroom or dry store where wall penetrations are not desirable, or when the layout is expected to change and adjustability matters more than the clean appearance of wall-mounted shelving.

All freestanding racking must maintain a minimum floor clearance of 150mm under the lowest shelf level. Queensland EHOs check this at inspection. Racking that sits flat on the floor is a harbourage point and a standard inspection failure.

How Much Does Stainless Steel Shelving Cost in Brisbane?

Stainless steel shelving cost depends on total linear metres, grade, gauge, mounting type, and whether the shelving is fabricated as part of a broader kitchen fitout or as a standalone order. When shelving is fabricated alongside benches and wall cladding as part of a full commercial kitchen fitout, the cost per linear metre is generally lower than a standalone order, because one site measure covers every element and the installation is done in a single visit.

Be wary of per-linear-metre rates from suppliers who have not measured your site. A rate that does not account for your wall substrate type, the number of bracket fixings required, or whether the shelving is in a wet or dry zone is not a reliable budget figure. A quote built from measured dimensions gives you a number you can put straight into a fitout budget.

How Stainless Steel Shelving Works Alongside Your Other Kitchen Equipment

Shelving does not sit in isolation from the rest of the fabrication scope. Above-bench wall-mounted shelving is positioned relative to the bench height and the exhaust canopy or overhead equipment above it. Wall-mounted shelving in a wash-up zone must work around the exhaust duct penetration and any wall cladding in the same zone.

When shelving is fabricated together with benches and wall cladding from a single site measure, shelf heights are consistent with bench heights, wall cladding behind the bench stops at the correct height for the shelf bracket, and grade and finish are consistent across the full installation. For the full bench and sink bench scope, see our stainless steel benches Brisbane page. For shelving fabricated as part of a complete fitout alongside wall cladding and canopy, see our custom stainless steel products Brisbane page. If the fitout includes an exhaust canopy, position the canopy and duct first, then plan the shelving around the cooking line — our commercial exhaust canopies Brisbane page covers sizing and positioning in detail.

Frequently Asked Questions

What is the minimum floor clearance for shelving in a Queensland commercial kitchen?

150mm under the lowest shelf level of any freestanding unit. This allows the floor to be swept and cleaned underneath and is checked during EHO inspections. Wall-mounted shelving does not have a floor clearance requirement because the floor beneath it is fully accessible.

Can I use domestic shelving in a commercial kitchen?

No. Domestic shelving is not fabricated to the load ratings, hygiene requirements, or material standards required in a food premises context. It will not satisfy a Queensland EHO inspection and is not appropriate for the cleaning chemicals used in a commercial kitchen.

Do you fabricate custom shelf lengths and depths?

Yes. Every shelf is fabricated to your confirmed dimensions from the site measure. Standard depths and lengths are a starting point, not a constraint. If your kitchen requires a non-standard depth or a shelf that wraps a corner, that is a fabrication question, not a catalogue limitation.

How do I decide between wall-mounted and freestanding shelving?

If the wall can carry the load and keeping the floor clear is the priority, wall-mounted shelving is the cleaner solution. If high-volume adjustable storage is needed or the wall is not rated for the load, freestanding racking is correct. Both are available in the same grade and finish.

Can shelving be added to an existing bench installation without a new site measure?

Not reliably. Shelving mounted above an existing bench needs to be positioned against the actual wall and around whatever services run in it. A site measure confirms all of that. Brackets produced from emailed dimensions without a site measure regularly end up in conflict with power points or plumbing.

How long does fabrication take?

Lead time depends on scope and workshop schedule and starts once the site measure is completed. Confirm it with your quote so you can plan around your opening date or construction programme.
